Timeline

Ingredients

For the cake

  • 170 g (¾ cup) unsalted butter, cubed

  • 150 g (5 oz) dark chocolate, chopped

  • 200 g (1 cup) granulated sugar

  • 3 large eggs, room temperature

  • 1 tsp vanilla extract

  • 90 g (¾ cup) all-purpose flour

  • 30 g (¼ cup) unsweetened cocoa powder

  • ½ tsp salt

  • 80 g (½ cup) dark chocolate chips

For the ganache (added)

  • 150 g (5 oz) dark chocolate, finely chopped

  • 120 ml (½ cup) heavy cream

Methods

  1. Prep. Heat the oven to 175°C (350°F). Line a 20 cm (8 in) square pan with parchment paper.

  2. Melt. Melt the butter and the 150 g of cake chocolate together, stirring until smooth. Let it cool for 5 minutes.

  3. Whisk. Beat the eggs, sugar and vanilla for 2 minutes until pale and thick.

  4. Combine. Fold in the chocolate mixture. Sift in the flour, cocoa and salt, fold until just combined, then stir in the chips.

  5. Bake. Pour into the pan and bake 30-35 minutes, until the edges are set and a toothpick comes out with a few moist crumbs. Cool in the pan for at least 30 minutes.

  6. Make the ganache. Heat the cream until steaming (not boiling) and pour it over the chopped chocolate. Wait 2 minutes, then stir until smooth. Let it cool 5-10 minutes until slightly thickened.

  7. Pour and set. Pour the ganache over the cake and let it run over the edges. Set for 15 minutes, then cut into 6 generous slices with a hot, clean knife.

Chef's tip:

“Pull the cake out while a few moist crumbs still cling to the toothpick. That’s what keeps it fudgy. Pour the ganache when it coats the back of a spoon, not when it’s runny.”
